The fermentation process gives it a smoother, sweeter taste than regular fresh garlic. It also seems to eliminate much of the usual sharpness or 'bite' that garlic normally has. The texture is definitely interesting and sort of reminded me of those soft, chewy types of fruit jelly candies.I also tried to make black garlic mayo ( Two cloves mashed up, in a half cup of mayo).
