Really like what I see from De Buyer and these Choc Nonstick Pans
I don't have long term use (yet) with this product and the "nonstick" coating will be the important test factor to watch. However, I do like buying from a company that is still in business since 1830. A company doesn't last that long unless is it well run and makes quality products. So that was my baseline for choosing De Buyer along with a lot of research, YouTube videos, etc. I purchased all (3) sizes of this Choc Nonstick Fry Pan from Amazon; the 9.5", 11" and the 12.5" Pans.So far, I'm loving these Choc Nonstick products and I also have the De Buyer Carbon Steel "Pro" versions coming. The Carbon Steel Pro versions were not available on Amazon when I was ready to order, so I went to De Buyer's direct website to get them.Back to these Choc Nonstick Pans, they are well made, slightly heavy (which is good) and the Nonstick coating is working the best of any I've owned. I've previously used (and abused) "nonstick" pan products, but these De Buyer pans are in a class of their own IMO. I'm going to follow the guidelines with these new pans to the letter to see how they hold up over time. I can already tell that the weight and design of these pans is better than the nonsticks I've owned before. These pans take just a little bit longer to heat up due to the thickness, but once they are at heat, they hold it perfectly and evenly edge to edge of the pan.Regarding the Handle, I found it very well made and will benefit from one of the "Lodge" Carbon Steel Handle Pads that are sold here on Amazon. I already had them on order and know that they will be useful. The long handle on these De Buyer Pans did not get too hot to hold (for me) "if" I held it by the rear half of the handle. The front half of the handle does transfer heat and is too hot to hold without protection. I took some IR temp measurements (on medium setting electric stove) from inside the pan, front of handle and rear of handle (attached for reference).Yes, I did get one small chip in the paint on the handle on 1 of the 3 Choc Pans I ordered. De Buyer has some responsibility for that issue, and Amazon's poor packing practices for heavy items like this is also a problem. De Buyer could eliminate a chip in the paint by using some foam material protection around the pan and a decent box. In all (3) of the individual boxes that come from Amazon, the packing material was not sufficient to protect a heavy Pan like this from being damaged. All (3) boxes were coming apart significantly when I received them due to packing that allowed the Pan to move about inside the box during shipment.Bottom-line, I'm very pleased overall with this purchase. There are many "nonstick" pans out there for the choosing. I researched all of the larger companies' products and De Buyer (manufactured in France) for 190 years was my favored choice. If the De Buyer "nonstick" does not hold up over time, I'll have the Carbon Steel Pro versions well-seasoned and ready to last several lifetimes. :)

Really a nice skillet, however...the handle while pretty will get very hot
Love the pan thickness and aluminum heat is very even. However the handle is I'd guess also aluminum and conducts heat way to well. Even frying a couple eggs I need my leather handle cover to manage the pan.

i like it but it is pretty basic and works fine like my other de buyers....but i conclude too small for french omlets with even two xl eggs - i am trying the caphalon contemporary eight inch which looks great and performs outstandingly - it is significantly larger and is perfect and i am now a pepin pro!- so this one to the garage for long term storageupdate sept 2021 - ok i am giving this another try with smaller eggs and so far so good....so now i have gear for small 2 egg omlets, and 2-3 egg omlets....getting crowded of course....but that is the way of things i guess

YES...worth 5 stars if not more
I've purchased these pans many times in the past 10 years and just recently purchased 2 more, a 10' and 12". I learned how great they are while working in commercial kitchens. The long, angled up handles are the only way to utilize all areas of commercial sized ranges and flat tops. I use them now predominately as an outdoor pan to work comfortably over fire pits, large rolling grills, etc and they excell. The handles could be unwieldy for a small residential range top but for my use, they've been excellent. The non-stick surface is outstanding. I can run three 12" skillets cooking cheesy scrambled eggs...when ready, the eggs slide effortlessly into the chafer, a quick wipe and they're right back in use with minimal heat loss. NOTE: Invest in a quality set of silicone tongs, spatulas, etc., up front. Buy once-cry once. You'll be happy that you did.

hmmm, not sure if this is actually legit
I have multiple De Buyer items and this is the only one I am a bit skeptical is real. First the item was marketed as new or perfect condition(packaging damaged) When we received it had multiple scuffs, nicks and dings as well as an odd discoloration on the handle. Not a big deal since non of this should effect the quality of cooking. However, we have used the item 4 times and only use silicon and softwood utensils and the Teflon is already heavily scratched. Also, we noticed that the pan is definitely not flat and wobbles on the eye. I am hoping this was just a manufacturing issue on this one piece but probably would not be purchasing anymore of the CHOC line unless I can test a few more pans out.

Superb Egg and Omelette Pan
This is a superb pan and an incredible value given the relatively low price. I loved this pan so much that I actually bought three (out of my own pocket) to use as omelette / egg pans at the retaurant where I frequently cook breakfasts. You just cannot go wrong with this pan. Simply treat it well; no metal spats or utensils, and simply wipe it clean with a soft damp towel after use. Did I mention that with the bright yellow handle that it is also a very handsome addition to the kitchen?

Should have bought the bigger one.
Love it so far. Perfectly non stick. Time will tell if it will stand up to long term use.

Best pan ever
I have been using some other De Buyer Carbon steel pans for steak. Really glad I gave a try to this one. It works great and no signs of any scratches after a year of usage. The heat distribution is amazing and really easy to cook many type of food. I always use this pan to sear wagyu beef and dip in Yuzu. Taste heavenly.

Excellent
I’m very happy with this pan. Looks good, works how it’s supposed to. I never put it higher then medium heat on my gas stove and always wash by hand and soft cloth. Also no metal utensils. I have No sticking, no warping and no issues at all so far. If I want oven and heavy duty seating I use cast iron. Thank u de buyer

Great pan, but not with gas
This is a great pan but if you have a gas stove beware. The paint on the handle where it meets the pan will melt.. This causes the handle to become loose.

Best Non Stick I have owned
It heats up quickly and evenly. Truly non-stick. Will need more time to see how it lasts.The handle does get hot so got to be careful.9.5inch is enough for one portion cooking but need wider for more. I will definitely get the 11inch of the same.

A crazy great deal
De Buyer is a premier cookware company. I have many of their carbon steel pans which are really great and not expensive at all. Somehow they have done that here too. A quite inexpensive non stick pan that is really thick and well made like other De Buyer pans. Am exceptionally pleased with it. And of course my omelettes are way better!
