Even when just a little is included in a recipe, the benefit is worth it. For anyone cutting down on meat, amaranth offers a bonanza of near-complete protein. It's not as low in the amino acid lysine, as many other grains are. Technically, it's not a grain; it's the fruit of a plant. It is also much richer in iron, magnesium, and calcium than most grains.
