I have a stainless steel prep table on wheels. Will this mount to the side or end of the table? And is it difficult to mount? Thanks

It is not difficult to mount. There are instructions. You will need to drill holes for the mounting bolts; and I would use split washers to prevent the nuts from coming loose. You can mount it almost any place, wood or steel. If the prep table does not have wood underneath, then you might want to put a piece of wood there to strengthen and stabilize the can opener - if the steel is not heavy enough to resist torque. The bolts would hold both in place. You will not regret purchasing this can opener. It will do a great job and likely prevent injuries of cuts from lids.

What is the difference between the Edlund #1 and #2? can one of them open larger cans?

The #1 opener is larger and opens cans up to 11". The #2 opener is slightly smaller and opens cans up to 7" tall. You can go to www.edlundco.com for all the information.
