Does this get in the way while grooming? How far does it extend onto the table?

I suppose it depends on the size of your dog. It does not get in the way while grooming my 13 pound MaltiPoo. The arm extends about 10" across the table.

Does it come with a screw to hold it in place off the table?

The tray comes with a screw that is attached to a knob that you tighten to keep the grooming tray in place

Will this fit a shoreline table?

No, it will not. I was very disappointed. It is just *barely* too small to fit on the arm.

what size are the scissor openings and the opening size of the tray on the side for larger things?

It comes with 8 small holes special for pet scissors and 2 medium holes for pet clippers or brushes. Overall size is 7 X 7 X 4. It has been really handy for me as an at home pet groomer.
