can these mirror tiles be cut?

They are real glass so if you have experience cutting glass it is possible.

The mirrors are extremely hard to remove. I’ve even tried using a knife to pry them off. Any suggestions on what would make it easier?

Try using a hairdryer or heat gun on low to soften the adhesive pads. That might work.

How thick is the glass?

I think a few millimeters. It’s thin.

Can I use e40 glue to stick it to my walls

I would imagine so. It comes with a sheet of double sided foam tape cut into squares though, and they're pretty strong, so I don't think you would need any other adhesive.
