Q: I use olive oil to cook andused it to fry eggs and now there is a oil residue on the pan that I can not clean What can I do to get the pan clean?

Fill the pan halfway with water and bring it to a near boil for about 2 minutes. Pour out the water and place the pan on a sturdy surface such as a wooden cutting board. Carefully use a Mr. Clean Magic Eraser on the warm surface.

Q: Are these the same as the sur la table version of the green pan?

Sur La Table is just another retailer like Amazon. A GreenPan is a GreenPan no matter where you buy it. However there are different GreenPan sets that have slight differances but ill let you look that information up yourself. Q: do you HAVE to use oil, or is the non-stick enough to keep things from sticking?

No, you don't and I agree you should never use cooking sprays unless they're the non-commercial sprayers you fill with plain oil at home. My "but" is that I find a small touch of olive, avocado, or safflower oil (say, 2 tsp for a big bunch of veggies or 2-3 chicken breasts) coated onto certain foods beforehand gives you the lovely browning (aka caramelization) and sheen as if you had used a "regular" amount of oil in a standard pan. It's especially useful for meats and hard veggies to protect the flesh from higher heats.
