Can i use these to operate a light from two different triggers? (Ex: reverse and switched)

You need a relay and a SPDT switch. The common outgoing + wire from the switch to the relay (pin 86) must have a diode to insure the current flows in one direction only.

Can this relay be used to send remote signal to amp

Yes it can but most amps only need a signal from the head unit, low amps, if you are turning on multiple amps then yes but these are for high amps draw. A smaller relay would work, 30/40 amp would be plenty.
