Q: What can this do that the HDML Cloner Box Pro cannot? Conversely, what can the Cloner Pro do that this cannot?

The main difference between the 2 systems is that the Cloner Box Pro has the capability to playback a recording directly to the TV/monitor using a small remote control. It will act as a digital video recorder, but with some limitations. Recordings are made to a USB drive, but how that drive is formated affects the performance. Formated as NTFS you do not have any practical size limit on the recorded file size, but I found that the fast forward/reverse functions did not work with the current firmware. If you format as FAT32 then you are limited to 4Gb files so you would generate at least 2 files for an hour show, but FF/reverse now works. This means that for TV playback, you would have to select multiple files to play -- not a big deal. If you copy to a computer, then you have to use their software (or some other video editing software) to combine the files.One other difference is that the Evolve can use microSD cards, the Pro can not without an adapter.

Q: Will it work to capture a camera menu (dslr or mirrorless) for video training purposes?

Yes you can connect and record from DSLR HDMI port. What you actually record and see on the screen is the function of your camera. I have a Sony A20 and when displaying in photo or video mode I see everything that I would normally see on my LCD including full menu info. I cannot see full screen video or photo unless I go to playback mode.

The maximum drive size the HDML Cloner Evolve can handle is 2TB. I am using a Western Digital My Passport 1TB Drive with a Saitech IT USB 3.0 Dual Power Y Shape 2 X Type a to Micro B SuperSpeed Cable for External Hard Drives to supply extra power and this setup works great with the 1TB drive formatted for NTFS. The data end of the SaiTech cable is plugged into the USB port on the HDML Cloner Evolve and the power end is plugged into a separate USB hub.

Q: What FPS does it record at 4k or 3440x1440p?

It will not record above 1080p; it does pass through 4k to your display.
