Quality knife at a nice price!
Holds an edge fairly well and requires little maintenance besides a little honing steel from time to time. Handle is comfortable and blade arrived razor sharp. I do a lot of barbecuing, and this is perfect for trimming briskets and slicing ribs.

Excellent Knife, But Not a True 6"
I used this knife in a meat shop for a few days, and was surprised by how well it held it's edge. We all were - especially for the price! It only needed some slight touching up with a fine steel every 40-60 lbs of poultry. Cuts like butter! That said, unless our other 6" knives shrunk, this knife is slightly shorter. Not a big deal, but if you're working fast production and are pretty used to a 6", that little bit might take a little getting used to. We have many knives in our shops, but after using this Mercer, some of us are looking a little closer at their knives again.

Super sharp, excellent
Iโve used this knife a few times now- first was trimming the silver skin and fat off baby backs and again for smoking tri tips. Highly recommend. We have some expensive knifes that are heavier and much harder to work with- love the curved and the small point to get under the skin.

Great Quality, Extremely Sharp!
I recently purchased this knife for trimming pork butts and briskets and could not be happier. I remove the entire fat cap from my pork butts to get a complete layer of bark and this knife completed the job with ease. I've trimmed several butts with it so far and will be trimming my first brisket this evening. This knife makes trimming so easy. I can't wait to get to work on the brisket.

Works like a charm
This is a good knife for the money. It cuts great. It comes very sharp. It is not the best at holding an edge, but it is not very expensive either. So it is not really designed to hold an edge like a more expensive knife would.. I'm happy with the purchase.

Great knife with the decent price
This knife is really sharp and so easy to use to remove fat on brisket and ribs. I even cut myself a few times as I have never used anything so sharp before. I am impressed given that the knife is not expensive.
