Can the track be shortened by removing pieces so that it curves in a smaller circle around a table-top tree?

you can make it 40 inches circle but you will need one new terminal track or buy all new curve track and make it 31/34 inches.

Does it really run on a traditional track? I ran my right out of the box and it derailed. Any Advice?

On tube track (traditional or o27) you can not use the 027 curves has to be 031 and up if you use it on the 027 curve it has to have the front wheels removed

Will this run with a standard track?

By "standard track" I assume you mean O-27. This is O-36 so the wheel flange is a bit taller. The old track's cross ties will get in the way. Your old train will run fine on the new track though. it is O Gauge compatible; minimum curve is 031; Set length is 63”
