Yes, you can bow. Use a good quality rosin and you should have no problems, It took about a week for my strings to stop stretching after that the intonation has been excellent. These strings come with a "Lifetime" warranty.

What is the different between the Standard and Deluxe set ?

The deluxe set has more of a gut string feel in my opinion. However, the E string is very flexible and has very low tension.
