These noisy, slow heating units are manufactured in China.

Q: For anyone who has used this to make cold brew, what is the stainless steel cage it refers to placing at the bottom of the carafe?

There is a small plastic and metal disc that lies in the bottom of the glass carafe. It was likely in there when you bought it, and you didn't realize it came off. I didn't know it wasn't attached until after several uses.

Sorta, I can only get it to 200F by thermometer and is pretty slow.

Q: How does the cold brew option work and how long does it take to make?

Sellers answer to this question is completely incorrect. Cold brew: you add grounds and water, unit uses a stirring cycle of 30sec stir, 10sec rest for approximately 30 min. Cold brew takes more time because it is cold. Seller states 4-5 min to make - nothing on this unit takes 4-5 min. If you want hot coffee, plan on 10 min for 12oz.
