what's the difference between this and the Post-It Big Pad?

These Post-It Notes are designed to cover one side of a Cubic Foot Box. Very Helpful to cover up Bar Codes from a previous shipping box.

Has anyone tried to stick these to the front of a non-magnetic stainless steel refrigerator front? How well do they stick?

It should not be a problem, but I use mine to cover up stray marks and bar codes on cubic foot boxes. Consequently, I seal the edges with box / shipping tape. No the adhesive on the back does not peel off.

Does the adhesive cover the entire back of the sheet? If not, is there anything out there that does have full adhesive?

No, the Adhesive Tab is the proportional size of the Adhesive Tab on the 4X6 and the 3X3 Post-It Notes. If you see 8 1/2 X 11 Post-It Note White Sheets, then you will see twin Adhesive Strips.
