COMES IN WHAT TASTES LIKE CASTER OIL
This ham comes sealed in a very sticky grease like substance and burns your throat like gasoline if accidently eaten. Unfortunately, when cutting the fat off the meat, that grease gets on everything and is PAINFUL to your throat if any of it gets on the meat. Other than washing the meat in DAWN soap I am not sure how to sufficiently clean the pork to get whatever that substance off of the pork. All I know is its 100% not eatable. Also, when I can the company, they do not answer the only posted phone number and I have not received a response from my message, so far, it's a complete waste of money.

Very good.
Good flavor. It’s a 9 over 10. It has all the certifications. I just cut it in slices and eat it. Makes your little party special. It comes the Ibérico alone, no knife, no extras.

Very slim ham
100% Ibérico acorn-fed should be the highest quality of Spanish ham, but this ham shoulder is not meeting my expectations. The flavor is good, but not excellent. The size is small, it looks like it has been trimmed before curation. It has a fair amount of fat. For this price, I’d expect something more substantial.

Good Jamon
Updated (after finishing it). Ham was great. Flavor was nutty and wonderful. Quite delicious. Much better than the Serrano Jamon at Costco (Noel for ~$100). Vacuum sealer is critical to preserve the cut meat so you can enjoy it over a longer period of time. I sliced this ham over the span of 2 weeks, slicing daily, and vacuum sealing any excess. This is the shoulder, not the back leg so its smaller and size and less meat - something I wanted as the back legs are more expensive and too much meat for me. I yielded about 4lbs (including ~0.25lbs drier / tougher meat for tapas). This was the right amount for us - even still gave away 1lbs to friends and family. Now a few comments in response to reviews I've read 1. Yes this ham does come covered in fat / grease which is messy - dont use dawn. I wiped off the excess and then carved it off. I also wore gloves and an apron when carving it. 2. The outside fat/skin/meat is not edible. Dont eat it. You are supposed to cut this away to get to the good stuff. 3. Yes, this contains a lot of fat, but you want some of that as it gives it its flavor. Be sure to cut through the yellow fat and dispose of that. 4. My Jamon shoulder weighted 12.3lbs. Between the excess fat, bone, and outside you need to cut off, the final yield was just under 4lbs of meat and edible fat (probably ~3.5lbs of delicious meat). 5. On the cost side, this comes out to about $94/lb for the meat. For context, the sliced vacuum sealed Jamon Iberico acorn fed goes for about ~$20/2ox on Amazon or about ~$160/lb. I figured I came out ahead. Only downside is this is a lot of rich meat. Make sure you invite friends and family over to help you enjoy it more quickly. My last Jamon (cosco one) was getting kind of nasty after 4+ weeks.

Poor quality. Disrespectful customer service.
I am very disappointed with this product. This Jamon is as dry and hard as a leather saddle. A perfectly good pig died needlessly for this pathetic imitation of Iberian Bellota Jamon. I lived in Spain and used to buy Jamon directly from the region where it’s made and I have never seen or tasted a Jamon that is more dry than an American beef jerky. Don’t waste your time or your money on this product, or this distributor. Their Amazon store did not respond and Dao website customer service said they don’t see anything wrong with the product. As you can see from the pictures, the Jamon is extremely dry and towards the center is more moist. It was improperly cured, obviously and since it is pork can get you sick. Terrible!!!
