what are the idenity of the wire colors

Look at the paperwork that’s comes with the motor or driver it comes with it, or you can find them online.

Does this motor come with a datasheet describing the number of poles, inductance, winding resistance, etc. so that I can program the controller?

Can I use it as a generator

It depends on the context of what you're doing. If you just want a technical "yes" or "no" , then yes. You can. But it wont really power anything, but will technically generate electricity. You'd need a pretty high gearing ration to generate enough to power anything other than LED lights.
