It is likely the fiber and the sugar is rounded up - it may be 4.5g fiber rounded up to 5g, and 1.5g of sugar rounded up to 2g. Thus, 4.5g fiber + 1.5g sugar = 6total carbs. They're rounded up because not every single sauce is going to be the exact same size or the exact same ingredients, so they're rounded up to reflect that margin of error. For example, if you ever baked chocolate chip cookies, you'll notice that not all cookies will be the same. Some might have more chocolate chips, some might be smaller/bigger than others, or some may taste sweeter than others. It is impossible to make every single cookie the same.
