Yes they will made turkey sausage turn out great. I give you a tip don't stuff them completely fill full half way they bust while frying if full

Made of collagen whatever that is.

Does this require refrigeration upon delivery?

No it does require refrigeration. It is a dry product that you soak to rehydrate. Worked really nicely when I made sausage.

How do you tie off the end?

I tie a knot. I read as you make the links between sausages you just need to twist. When I did so they would untwist.
