I liked this knife, but I was surprised at how quickly it dulled...in just a few months after only once-a-day use for a few vegetables for my omelette. Maybe that's normal -- I'm not a knife expert. But to me, it was disappointing.

I would give this knife 4.5 if I knew how. While I am only 21 years of age I have worked in multiple kitchens, and was recently promoted to sous chef; White Cook was kind enough to send me this knife as a gift, which was a pleasant surprise! I have become quite accustomed to using my Dalstrong Shogun Kiritsuke, so the weight and feel of this knife was a little off putting at first. I am not sure if it was due to poor transportation or just an oversight, but the knife arrived with a broken tip; granted this was not hard to fix, so I have all but forgotten about it. My initial impression was that it is significantly lighter than the knives I use day by day, but I understand this is to help reduce fatigue over extended use; the handle is made of real bamboo, but also has a wonderful satin feel. After reshaping the tip I gave this knife a run through in my kitchen at home, and I have already grown quite fond of this knife. The weight is great, and the edge on this knife is equally fantastic; I am definitely looking forward to taking this knife to work and giving it a test drive in a professional environment.

I purchased this knife about three weeks ago. I love it. I have used it a handful of times and washed it in the dishwasher with no problems. It cuts so smooth and fine. I love these knives because they make me feel like a chief when I use them all the fine chopping and dicing you can do. I have added a few pictures to show you how smooth it cuts. It would be a perfect gift for anyone that loves to cook.
