Does it have 7.1 surround sound option?

There is a surround option if you are using them on pc not sure if it's 7.1 though. On Xbox you can use Atmos or DTS-X if you buy the apps. On Playstation they are fully compatible with Sony's Pulse 3D sound system.

Does the mic work even when its not pulled out or do we have to pull it out if we're trying to talk on a call or in chat?

Does it work.. yes but its not very good (i havent heard the quality but have seen the mic activate in game). It is designed to be pulled out when you want to use it. Its more of a storage place for it to go when its not in use so its out the way
