I have done hundreds of eggs so far no sticking very nice pan

I liked the light weight of the pan. I was able to make the omelet the first time and got better each time. It was very nice on the regular burner but not so good on induction stove. This is because you have to lift the pan to make the omelet.

Excellent for making literal egg rolls

I've never tried to make a rolled omlette before so my expectations were low just based on my skill. The picture if my first attempt and most of the credit goes to this pan. I've started trying to make more complex recipes, added ham and cheese, sugar, chicken stock, mirin, soy sauce, and that makes it easier to tear the egg but when it tears I slide it to the front curved edge of the pan and move it over the heat and it does a pretty good.job at repairing the damage. The rivets holding the handle on aren't flush to the pan but that hasn't been an issue. I also find that I only have to add butter once at the beginning, even after multiple rolls the egg does not stick. Very happy with this pan.

We saw a video of eggs being made, slowly folded, then more mixed egg being added, and again folded over. I have looked for this pan for 7-8 years and decided this was the best size. As it comes with the silicone spatula to fold the eggs, my folded eggs are coming out perfect!! Cooked on low gas flame, with a bit of butter wiped with the pink silicone brush between folds, I truly enjoy the art of this egg food omelette. My husband loves it also!!!
