Q: What material are the water tanks made of?

The cold water tank on this unit is made of stainless steel.

Q: What does (dispencer only) mean? Does this hook up directly to a water source?

Dispenser only means no filtration kit or system, no installation kit or plumbing hardware. Traditionally this is for someone who already had a direct plumbed unit (point of use) water cooler/dispenser with a filtration system and wants to replace the water dispenser. This way they do not have to purchase all the hardware, water line, water valves, and filtration system, filtration system mounting hardware, etc. if they already have it in place, or want to use there own filtration system of choice. This unit comes ready to hook on to a 1/4" water line, meaning it has a 1/4" polyethylene line coming off the back of the unit, that you hook up to your 1/4" water line. Q: How do you know when to change the filters?

It looks like the listing you are referring to is for an Oasis Onyx Counter-top dispenser with a separate 5 Stage EZ filtration System. Separate meaning that it does not go inside of the dispenser. The frequency of filter changing is dependent on the quality of municipality or well of water being supplied and the amount of usage. Industry standard is 3-6 months on Stage 1 the Sediment, 6-9 months on Stage 2 the Pre-Carbon, 9-12 months on Stage 3, Stage 4 and 5 is estimated a 1-2 years. Hot water button sticks

This is a replacement for the first one -- they both have the same issue. The hot water button doesn't slide shut; instead you have to turn it off, then on then off so the water doesn't leak. Someone in our office got some hot water for their tea. When our cleaning crew came to the office 2 hours after closing, there was a flood in the kitchen, water all over the counter.I noticed newer models don't have this slide.
