Cangshan Z Series 62731 High Carbon X-7 Damascus Steel Forged Chef Knife with Walnut Sheath, 8-Inch

I have used the knife for several weeks now and it holds the razor sharp edge.

I received this as a gift and being in the culinary business, I appreciate a balanced, sharp, fine crafted, easy to use chef knife! This did not disappoint and I love the etched details in the blade. The packaging was impressive too! (Not that it matters, but it was a nice touch) Washes easily, cuts easily and is my new "go-to" from my kitchen knife display! I even named this beau!

I am not a professional cook or chef. I have had Zwilling's and inexpensive Tramontina knives for years. I thought I would try something different. I love the look and feel of this knife and it's holding it's edge well. it slices and chops great but I cannot rock with it very well, it feels grabby on my plastic cutting boards. It slices through cantaloupe and watermelon with far less resistance than my Zwilling. Fit and finish is good, no uncomfortable edges. The Blade is hard so I'm sure it would not fair well with bones or frozen food. I think it is a great knife. Far above other "Made IN China" brands. Hope this helpful.

Clearly a lot of care went into creating this blade. It has a gorgeous folded look, with a beautiful wooden sheath. A lot of effort was put in to creating a perfect edge. It's so sharp that it slices through even a fingernail with absolute ease, and creates a clean, smooth cut. And I know this by personal experience, so make sure to handle the knife with the respect it deserves as you can cause some serious damage to yourself if not careful. I've only had the knife for 3 months, but it has maintained that edge through nearly daily use.

Sharpest knife out of the box I have ever received. Actually shaved arm hairs out of the box. Excellent presentation packaging. Balance is outstanding. Time will tell if the X7 steel is truly outstanding but I.ve used for over a week now and it cuts everything I've thrown under it (food wise) like butter. It's like the knife edge can't wait to get through and kiss the cutting board. There is a very slight twist in the handle portion end steel but honestly doesn't take away anything from usage and presentation. Extremely minor quality control hiccup that I can live with. Now... when are they making a nakiri with the same steel and handle look?!

Great knife, hubby bought me two different knives for my birthday at over $200. I had to return one and it was a difficult decision to return this one. Great magnetic wooden sheath would definitely save the edge on this knife. Really beautiful knife to handle.

It is not the best I have worked with, but it is the best I have owned. I will continue to support this company, and their expensive knives, because they are well made. The steel is forged be people that know how to work it. Very pleased with this but. I'm coming back for the whole set.
