What is the height of the monitor without the stand?

It is about 13 7/16" (just shy of 13.5" from the bottom of the lower screen bezel to the top of the upper screen bezel. It should sit roughly 13.5" high on the desk w/o the stand. However, keep in mind, there will be no clearance for the speakers which are inside the bottom and point downwards, so I wouldn't use it sitting flat on a desktop unless you plan to not use the built-in audio.

Does this monitor work good on the ps5?

So far the only game that i have played that utilizes the 1080p 120HZ is call of duty black ops Cold War. But it does operate pretty well. You can notice the difference. You just have to change your settings on the ps5 to performance mode. There should be YouTube videos on how to do it.

For some reason, the screen keeps turning off, turns black, and then comes back and these jumps of turning off the screen are becoming more and more

I had a similar issue but then mine went black period. I did a return to asus and they claimed because of a small scratch from months ago my monitor was out of warrantee. After several rounds of my protesting someone stepped in and reconnected whatever tiny wire it was but that took several weeks. If you're near the end of your warrantee I'd open an RMA asap.
