Okay, so I'm pretty sure my vegetables have started holding emergency meetings in the crisper drawer since this knife arrived. The Miyabi Birchwood SG2 6.5-inch Nakiri Knife is not just a knife; it's a vegetable-processing machine. Such a beautiful knife and it slices like a dream!
Simply gorgeous. Admittedly, I bought it because I'm collecting this set because it's so beautiful but BONUS is that the knife is a first-rate addition to my collection not just because of it's stellar good looks but because it cuts like a dream. Expensive, yes? But worth every penny IMO.

miyabi nakiri
We have had the knife for 4 years. My wife is not a professional chef. But an awesome cook. That being said, I like having the right tool for the job when I working on a project. As we have gotten older we can afford better quality items. The Miyabi replaced a Wustof knife. I hand sharpen the knives on Arkansas oil stones. I have been sharpening knives since I was a boy-scout. Most of the kitchen knives can shave the hair off your arm after I'm done sharpening them. The Miyabi keeps its edge a long time with use. It is easy to sharpen and the achieved sharpness is on another level. The Miyabi is ridiculous sharp, out of the box and is easy to keep that sharp with a high quality Arkansas stone such as; a surgical black oil stone. Using the knife is comfortable in the hand, and the blade is easy to control when slicing.

Never Disappoints
My Father suggested this brand. He had bought me. Pairing knife of this brand. So I bought this one and one other by the same brand as a wedding gift for my brother in law. He’s a Michelin chef and he said this is the best knife he has ever owned. He is so impressed. I speak to him about once a month and he mentions how much he uses it and how much he loves it. I’m tempted to get one for myself.

Knife is great, but you can definitely seen it has been sharped before. Not a brand new knife. Please give me a new knife for the amount of money I paid for.
