How do you flip the face so that when you wear this on you left hand the side button is on the side of your fingers? face is upside down!

You flip the strap not the watch face. You unclip the two sections of the strap and swap them around to the alternate.

Can I play music or store music on Sense 2?

At the moment you cannot play or store music. Maybe when all the Google features are "fully functional" at some point in the future.

Does it allow calls to be made/received without carrying the mobile around?

Nope. It connects to the phone via bluetooth. You need LTE technology for that.

Always on display - is it easy to swap between mode as it's something I might do often depending where I am? Just wondering if it's not so practical.

Once you get used to the watch it can be easily done.. but I'm going to mention when it detects a walk you carnt use the watch for other things you have to end the walk to use the watch which is annoying .
