Pronounced Sh-pek, this Italian ham is a traditional cured meat from Northern Italy, close to the Austria and Swedish boarders. Speck is cut from the upper portion of the hind-quarter and is air dried and smoked with beach wood to impart flavor. The Alto Adige Speck is the only speck to carry the IGP designation that signifies true authenticity. Slice paper thin and serve on a charcuterie plate, in a Panini, or pair with cheese.

Product arrived fast, a day earlier than expected. Thank you to shipping it out rapidly! Product arrived in the manufacturer original vacuum sealed bag and was kept cool by 2 shipping cooling pads that were added inside the large padded plastic envelope.Product was in excellent, retaining all the amazing flavors and aromas typical of this prosciutto-like dry-aged cold cut. Paper thin Italian speck is a delicacy and this product is the real deal. Mouthwatering.. Highly recommended from this seller!

"Product to be sold by weight"
says the label. And herein lies the problem. I understand that there is variability in the packaging and that they can't all be the same size. I also understand that pricing a SKU on a case-per-case basis (i.e. by weight) is not feasible for an Amazon merchant. I am willing to pay a little more and get a little less because I can't purchase this product at my local supermarket.I opted for this 6 lbs piece that is priced accordingly, but I received a 5.2 lbs piece. There is a bit too much missing. The same seller is also listing a 5 lbs version of the product for less money. Had I ordered the 5 lbs version, would I have received 4 lbs? I will not find out and instead go back to my old source.Just to be clear - there is nothing wrong with the product. Südtiroler Schinkenspeck, from a formerly Austrian part of Italy, is certified with a stamp on the meat, and the quality is consistent, so there is nothing to worry about. I just don't recommend buying this particular SKU here on Amazon.com. Do your own research.Update: 6 months later I ordered another piece and it was once again just a little over 5lbs. It looks like that's as much as you will get.

A good value.
The speck was very tasty, but a little uneven in its dryness. For the price it is really a good value, and make a terrific addition to dihes where you might use another form of smaked meat!

5.3 lbs. Shipping Weight
Although the beginning description of this product indicates it is 6 lbs., later on it states the shipping weight is 5.3 lbs. which brings it to within 0.01 lbs. of the weight that Trailman received in his orders. Looking at it from that perspective, it doesn't appear that you are receiving an underweight order. Just need to have the opening description show the correct weight of the product. I really can't comment on the quality of the product. I was researching Speck to see how much it costs and where I could order it from. I saw a recipe for a mozzarella and speck grilled sandwich in April Bloomfield's "A Girl and Her Pig" cookbook. It sounds delicious; fresh buffalo mozzarella is no problem to get, but I had never heard of Speck before. Now I know and this company sounds like a winner to provide. it. Will do an actual review once I taste it. (Maybe quite awhile!)
