An excellent knife when used for its intended purpose
In Response to the 1 star review left against this knife. I think the reviewers has misunderstood the purpose of this knife.Victorinox knifes are made from a softer steel than Global and IShen. Whilst this means that they can dull more quickly, it also means that they are easier and quicker to sharpen - something that a professional chef would due as a matter of routine with a steel before any shift (a Sharp knife is a safe knife!). More exotic Brands require wet-stones, diamond sharpeners and other unnecessary sharpening devices.The softer Steel also allows the knife to absorb impacts better than a knife made from a harder steel (which is more brittle - I have seen Global knives crack, chip and shatter during my career as a chef). This knife really can take a pounding from a rolling pin or mallet to drive it through a large swede, slabs of meat or lobster if needed (not recommended of course, but sometimes needs must).This is a 10 inch Chef’s knife, it is long and heavy, but that’s because its designed to be used to cut a large, dense items that a smaller knife would struggle with. It’s not designed to be used as an everyday knife for slicing and dicing (Try one of Victorinox’s excellent Santoku Knives for this) so yes, the handle is large, but then you need a large handle for purchase if you are using it to cut through something dense where you need to maintain control under pressure.For what it is designed to do, this is an excellent knife that will take abuse in a commercial kitchen environment that would destroy more exotic Brands. Think of it as the difference between a Ferrari and a Porsche. Both are fast, prestige sports cars, but whilst the Ferrari can be temperamental and fragile the Porsche is ultra reliable that could be used everyday. The Victorinox is the Porsche of Chef’s knives.

Zu lang gekauft
Das grand Maitre ist ein wohlgefälliges Kochmesser und sehr scharf. 25cm in meinem Falle viel zu lang. Ein 16cm langes wäre optimal gewesen.Ich benutze es praktisch nie.

Love at first slice.
This is a great knife. I had a sani-safe dexter russel before this, and that was an okay knife. But this is a great knife. quality steel.
