Q: Will the alarm sound when it cools to a certain temperature, or just when it heats to a certain temperature?

It beeps when it is within 3 degrees Fahrenheit of the desired temp, beeps a different tone when it hits that to and a few degrees over and a third time when it's over that up to about 10 degrees over the desired temp. It will repeat those tones on the way back down as it cools. (Did a simple test boiling water and cooling back down after turning off the heat.)

Q: How long is the probe?

It is pretty long, about 12". I don't use it frankly. It works well for some things, but I bought it for making candy. The clip is decent, better than some, but the digital readout is very difficult to read when it registers above 230 degrees F.

Q: Does it NEED minimum amount of liquid in the pan (2" or something) in order for it to work accurately ?? Or will it work even for small batch ?

When making candy I tilt the pan when I want to check temperature so that the thermometer is submerged to a greater degree.
