Shipton mill pastry flour is my favourite
This is a 6 x1kg pack of Organic light cake / pastry flour , that comes in its own cardboard box for easy storage, direct from the mill. There is a 9 months sell by date on the sealed box with an official lot number. The reason I buy this online is because I am down south and my local supermarkets don't stock it, or any decent light cake / pastry flour. What is the difference between regular supermarket plain flour and any light cake & pastry flour direct from a mill? 3 things...1: consistency,if you take one of your supermarket flour between your fingers and rub them together it feels smooth but if you compare it to proper light cake / pastry flour it feels like sandpaper as proper pastry flour feels like silk, and in turn, this far more even grind, and much finer grind gives you the most excellent pastries and cakes.2: grade...Supermarket plain flour is a grade of flour that is poor in nutrients, therefore cannot be classed as bread flour, along with not enough gluten, it is also missing ameno acids and essential oils. This is because it is grown from a low grade seed on poor soul and may even have been boiled to improve it, before drying again, and grinding.Proper pastry flour is grown from grains low in gluten but still rich in amino acids and lipids. This allows it to be ground finer, and gives it a smoother consistency, and for your cakes it was ffers a lighter texture, for your patries it allows added fats ( lard, butter etc) to homogenize evenly leading to better ride, crisper more even pastries.3:Additives:Because the grain is healthier and the grind is finer and more consistent, there is no need for flour improvers or other additives like anti caking agents ( stops the roughly found inferior flour from sticking and clumping together, nothing to do with yummy cakes) or preservatives, as mills send flour out direct, it doesn't sit on a shelf for years and yearsAnyway, those are my personal thoughts on the matter.Baking is fun, why not make it easier, be more successful, less disappointed flops because your flour is weak, old, full of additives, all different size particles, cannot bind to fats evenly, why make life hard when pastry flour direct from a working mill from decent grain is available, online as well for those of us who don't have a working flour mill with access to healthy grains nearby. Also, did I mention it is organic??Hope this helps anyone wondering what light cake / pastry flour is, why you might like to try it, if you will get through it all, and if it's organic. Also, did ts got a royal seal of approval on the box too.

Finally a cake flour without raising agent
I have been struggling to find flour everywhere that does not have raising agent already added in it.This flour has given me more flexibility for making different pastries and cakes. The finishing product was way better than using the supermarket sponge flour. It is great value for money. The only little flaw is that I have to stock 6kg of flour at home haha.Definitely would recommend it!The photo is a traditional Hong Kong bun made by this flour and I am very happy with the outcome!

Excellent quality.
This is the first time I've used this flour. I ordered it as nons in shops due to impedi g Lockdown at the time and it wasn't in stock. They said they'd send it as soon as available nd they did. There's 6 1kg bags of plain flour, yiu can add baking powder for cakes to make it self raising. The flours light and fine and it made gorgeous pastry for my little sausage rolls... I do lots of baking, I've never heard if it before, but I shall buy it again definately, it's lovely and has past my test!!!

Buy if you want light cakes
I’ve been looking for cake flour for ages and I would usually make my own version of it for making Japanese chiffon type cakes. Found these Shipton Mill ones on another website and it worked out about £5 for 1 bag, so got these instead and will give the ones I don’t need to friends n family. The order literally took 1 day, v impressed. The flour itself is lovely n light, best for soft airy cakes. The best before date isn’t until next year, so this will last a while.

Great flour!
I love Shipston Mill soft flour!I use it in recipes calling for plain cake flour. It is lower in protein than normal plain flour, so delivers a more tender crumb. My most recent order, of 6 packets, arrived today with an expiration date of May 2020. I love to bake cakes, and will easily use 6 packets within 8 months. Thanks Shipston Mill! 🌟
