Nice peeling knife
I am in the process of replacing my old knives with better quality ones. Although the other knives I bought were Shun's, I decided to go with the Wusthof peeling knife because of the slightly longer blade and also because it was less money than the Shun peeler. I wondered if I had made a mistake at first, but this knife is nice and sharp. It is much more comfortable to use than than my old Mundial peeler. It slices through ginger like butter and even sliced a piece off the sponge I used to clean it with. I definitely recommend this knife if you prefer to use a knife to peel certain fruits or vegetables over using a standard peeler. This is one of those types of knives that does not normally come included in a set and has to be purchased separately, but I find it invaluable. As with all good quality knives, always take care to wash these by hand and never in the dishwasher. Be sure to hone it one a week and sharpen professionally or with a whetstone when needed.

great for veggie carving
I like to create veggie carvings. I needed a curved bird's beak blade, and this one is perfect. Wusthof has far surpassed Henkel in quality in my opinion. This blade is razor sharp (keep it that way with a honing steel after EVERY use), and is very well balanced. It just feels "right" in my medium sized male hand.While a bit costly, it is a full-tang masterpiece that has found its way into other cooking projects. Victorinox makes one that is much lighter if weight is an issue. But I love Wusthof knifes, and am glad I purchased this particular one.If you care for it, you won't be disappointed. If you just toss it in a drawer (vs. a knife holder, of which there are countless varieties) and never hone it, then it will become dull and you're better off spending less $ on a cheap knock off that you'll probably end up tossing in the trash in one year complaining it wasn't sharp enough because YOU didn't take care of it. A quality knife needs love, just like a good woman.

Great little knife. Quickly became one of my favorites in the kitchen.
Okay, I have lived most of my life without a bird's beak paring knife. But I started canning this year and really wanted something that would get around fruit and make shorter work of peeling and paring. I don't really do anything decorative with it, but just in terns of general use... I love this knife. It has quickly become one of my favorite kitchen knives.I have a Wusthof Classic knife set that I have had for something crazy like almost 20 years. Still like new. So I am a believer in Wusthof quality. I considered both Dalstrong and Hammer Stahl bird's beak knives, but decided to go with the Wusthof instead. I use it all the time. I am not a professional chef, although I have restaurant experience, and I live and die in my kitchen. I have special dietary needs and cook from scratch about 95% of the time. Quality knives are a necessity for my sanity. Glad I spent the extra $ and got the Wusthof.

Great knife
This is a well made knife that holds a sharp edge when maintained. Great for peeling fruits and veggies. My mother recently discovered mine and become very found of it so I purchased her one for Mother's Day. Hard to go wrong with Wusthof Classic series. I believe these are supposed to be "dishwasher safe" but when paying this much for knives may want to consider hand washing. These do hold an edge well but DO require sharpening periodically to perform the way they are intended.

Fantastic little knife
This curved little knife works so well when peeling. But then I tried it when I needed to devain shrimp. Well, it sure made that job a lot easier. Great little knife.

Didn't know I needed one...
Handy shape for cutting fruits and veggies. Works well cutting around bones. Nice handle on these classic versions.Also use this for cutting open food wrap packages. Holds a sharp edge so be careful. Easy to keep sharp on those cheap draw type sharpeners. Get a sharpener that sits on table with the coarse and fine slots. This knife goes well with the 3 1/2" Classic Paring Knife.

Nice thing about the hook blade is it stay sharper longer than a straight blade as only the tip touches the cutting board unlike straight blades. Wusthof large chef knives are really heavy, but these paring knives feel just right, nice balance, and solidly built. You can feel the quality.

I love Wusthof knives
I love Wusthof knives! I received this knife as a present and I'm so happy with it! It makes peeling vegetables and fruit so much easier. Cutting out the ribs of peppers is a breeze and the sharpness is surgical grade. I can find no fault with any Wusthof knives I own.

Beau et efficace.
Petit coteau bien équilibré, bien en main, dont le "bec" pointu est hyper efficace. La lame est comme celle d’un rasoir. Et un bel objet de surcroît. Parfait pour moi, demande du soin en retour.Il ira bien avec un coteau d’office Classic de 9 où 10 cm.

A Real Whizz
Neat short curved blade makes peeling easy and the handle is long enough for a male hand. I should have bought another of the much cheaper PC version made in Portugal of german steel when available as this is pricey.

Sogno questi coltelli da quando li ho visti e presi in mano per la prima volta. Danno l’impressione di essere fragili ma sono davvero rasoi ottimamente progettati. Senza dubbio chiedono rispetto per preservarne la qualità. Il costo di suo è alto ma grazie a Dio di tanto in tanto si trovano offerte.spero durino nel tempo.

Sehr gut verarbeitet wie gewohnt bei Wüsthof und es liegt super in der Hand.Der Schliff ist etwas rau aber scharf. Ich habe das Messer miteinem 1000 und danach mit einem 5000 der Japanischem Schleifsteinnochmal abgezogen und nun hat es einen feinen Rasiermesser scharfen Schliff.Ich bin super zufrieden und kann das Messer nur bestens weiter empfehlen.
