What's the maximum height of the cup/mug/flask that will fit under the dispensing nozzle?

By lifting the flap a large mug will fit underneath. Not sure of exact measurement but all my mugs fit easily. hope this is helpful

Does the milk frother have it’s own plug or does it work as part of the machine?

The milk unit base is part of the coffee machine so it has one socket plug but it has its own button to froth the milk. Coffee machine and milk unit has separate buttons to operate them

can you make 2 shot cappucinos easily or only one shot at a time?

You do have some control of how much coffee leaves the pod. You can press the espresso button once and then a second time. It's not really a second shot but just more water going through the pod and so the 2nd press will make your coffee weaker.
