The media could not be loaded. *In the pictures that is less than half of the meat, we had already used the other half before writing the review.*My husband loves Italian cooking, and many recipies call for this pork cheek. Instead of using the common alternative panchita we opted to order something authentic and this was a perfect match.Shipping was fast, arrived in a few days. The taste is fantastic, while preparing the meat you can see the fat become clear jelly as it renders, entirely pure delicious flavors. The subtle seasoning leaves a strong smoky note while the tenderness of the cut melts as you eat it.I can't recall the name of the recipe he used, De Pepe something with a Parmigiano-Reggiano based sauce and spaghetti pasta served with tiny slices of the guanciale cooked into it. *TIP* don't overcook the meat in the pan or it will become nearly indistinguishable from regular bacon. You need to cook it properly to get the real flavor to pop. So don't overdo it! His workers asked him to make more and bring it in, it's always a compliment when workers want food!Happy cooking everyone! Will purchase this again.
