Excellent tapioca for old fashioned pudding!
Excellent pearl tapioca for making old fashioned pudding with large pearls, rather than the granular "minute tapioca" which is the only version I've seen in stores in recent years. The review stating that this wasn't "typical" tapioca and listing their soaking times must not have cooked it; every tapioca pudding recipe I've ever made with any brand (even the granulated stuff) requires cooking after soaking. Their photo did not look like it had been cooked, only soaked. It will still be white and opaque when soaked. Once cooked according to directions the tapioca pearls will turn mostly clear with a little milky translucence in the middle. I made a delicious pudding with the recipe from the manufacturer located in the information photos above the reviews (after you scroll down on the listing). It is different than the recipe provided on the bag itself, which makes a bigger quantity and calls for higher ratios of tapioca and sugar. Standard recipes are easy to find and I'm sure these will perform well in any regular tapioca pudding recipe that calls for large pearls. I soaked my pearls for 5 hours before cooking according to the recipe and had no trouble with them turning out nice and clear with an enjoyable bouncy texture. As for size, these are what you'd expect for old fashioned pudding, which is the primary purpose presented on the package. If you want larger pearls for making bubble tea drinks you'll want to look for "boba" pearls. These large tapioca pearls cook up to about half the size of standard boba pearls. I did my best to show the size differences against a ruler in my attached photo. Boba is about 1cm in diameter, and these cook up to just around 1/2cm on average. I actually plan to try cooking them as a boba substitute, despite their smaller size, because I like that these are single ingredient and less of a choking hazard for my kids. While I haven't tried this approach yet, I'll treat the soaking and cook time about the same but just use water and stir the cooked and drained pearls into a little brown sugar to simulate traditional syrupy boba pearls. If I try this successfully I'll try to remember to come back and update this review.

Almost impossible to find in stores!
Family loves tapioca pudding.... These are the bigger pearls which are even yummier.

These are good.
I am using the large pearls for the first time and I really like them for my tapioca pudding. So far I have made two puddings and the first pearls soaked for about 5 hours and made a nice pudding and this 2nd one I made today soaked for at least 12 hours and there is a big difference in outcomes. Volume mostly. I soaked them both in whole milk. I added raisins and chia seeds to both and three eggs and I am very happy with the results.

Good tapioca, but not "large" pearl
These are not "large" pearls. They are a bit larger than bob's small pearl, but not even close to the boba size. Great for tapioca pudding. I gave it 4 stars because they really are not large. Not sure they are even medium

Luscious Tapioca with Plain Janeโs Husbandโs Recipe
I followed this (Plain Jane) reviewerโs recipe, tripled it for a crowd and made these modifications: Soaked 1.5 c pearls in cold water for 4 hrs. Strained, rinsed Then followed her instructions. I used equal amounts vanilla bean paste instead of extract. The final tripled result yielded about 8-9 cups of luscious vanilla custard with perfectly cooked, slightly chewy pearls. It set up just right after cooking, and thickened considerably more after 6 hrs refrigeration. I recommend eating it while warm. Make this. Share it with people you love. Itโs truly a gift.

A tightly sealed package, US farm, wouldn't have expected a problem with a year to go on best date.
I purchased Hoosier Hill Farm Large Tapioca and never have bought from AMAZON. Our family enjoys Tapioca and couldn't make a trip to distant store to purchase it. I always make a double batch to share with friends/family. I had never purchased it online before. As I was stirring the milk constantly, 3 mealy type little bugs rose to the surface. I spooned them out. I never expected bugs in tapioca. I've never had them even in flour. I had soaked my tapioca all night, drained and rinsed it before putting it in the double boiler. I didn't tell anyone, but we ate it. The date on the package says #HHF-227N NEW Best by 06/17/2027. I had put it in a sealed container, but fished out the bag from the trash. But, now I wonder if more bugs are hiding in the container. I probably should throw it out. Delicious but disgusting!

Good product and value.my favorite tapioca recipe is here
This is just what I needed to make old fashioned "Fish Eye" tapioca. Put 1/2 cup of raisins in small tupperware container and add 1/4 cup of rum or bourbon, seal and leave for at least 4 hrs (soaking over night is OK).then... Soak 1 cup of pearls in 5 cups of milk for at least two hrs.Add 1/2 cup of sugar and 1/2 tsp of salt.Heat in double boiler and cook for about 50 -60 min until mixture thickens. Separate one egg and slowly temper yolk with about 4 tablespoons of hot mixture then add tempered yolk mixture to pot, stir and cook another 15 min. Beat egg white stiff slowly adding 1/2 cup sugar to it then remove tapioca mix from heat and add (stir in) raisins and egg white mix followed by 1/2 tsp of ground nutmeg and 1 Tbsp of vanilla extract . Allow mix to cool to about room temp then stir in 1 cup of cream (half and half will do). Put in large bowl or spoon into separate dessert dishes and top with a sprinkling of ground cinnamon. Eat immediately or refrigerate and serve chilled . You can do this without a double boiler but then constant stirring is necessary. This recipe makes 8 servings that fit into a small old time glass sundae dish. You can cut the recipe in half and still use one egg: it will just be a little fluffier..For the full recipe your double boiler should be at least 2 Qt.

Oh my gosh, soo yummy!! I've made 2 batches of tapioca pudding following the recipe on the bag. So good and the quality of the pearls is impeccable. Definitely will buy again!

love this product
I couldn't find a source for this in my home town, so was happy to find it on Amazon. I used a new method of making Tapioca pudding in my crock pot. It was a hit with my family. My husband's only complaint was that the pearls were not as big as he remembered from childhood; I think he's right. so next purchase I will look for a larger pearl size, hopefully this company can supply.

Do NOT buy this product!
This was such a waste of money! I'm a seasoned home cook and I've prepared tapioca many times over the past 20+ years. This was my first time using this product. The package instructs to pre-soak the pearls for two hours. I soaked them in cold water and was left with a pulpy mess - the pearls completely broke down. So, I tried to cook the pearls to make tapioca without pre-soaking. The cook time on the package says 25 minutes. I cooked them for over an hour and they would not soften at all. Do not buy this product!
