This is a router so it's compatible with any internet provider. What you're thinking of is a modem, I'd recommend the Motorola sb7621 if you have service below 600 Mbps or Motorola sb8200 if you have 1gbps speed.

gigabit fiber compatible?

Yep. I have Spectrum Gigabit and it maxes out at 940Mbps download which is full speed gigabit. The upload speeds are usually around 30-40Mbps but this is due to Spectrum and not a fault of the router.

Is there any performance or feature difference between this red edition of the ax-86u and the previous ax-86u black edition?

There's absolutely no performance difference, it is just aesthetic. The red router is just a special edition one for people who like Gundam. If your not into that, just get the regular black one, you're good.
