Perfect steak everytime!!!!
I had read quite a few reviews, majority pretty good. Had been looking for a very large pan for a very long time, and too be honest was a bit nervous that I'd blown a load of money on a pan that wouldn't live up to the expectations that I had Well I can assure you that despite some of the negative reviews this pan is the real deal, I can only assume some people don't use them properly, seriously get the pan hot enough to slightly smoke turn down and nothing sticks, really impressed washed with hot water as stated with cleaned it a treat and then oiled (I used rice bran oil as can take very high temperatures also seasoned a few times just to get it going!) Use it as stated and you will love this pan!!! Ps.. I used on gas hob and as other reviewers stated you will need to turn down heat as it gets seriously hot, so careful not to burn them ribeye's!!

Will last forever
Love cooking meat and burgers on this, absolutely perfect browning and crust. I’m sure this will outlast me and I love the fact I can put it on the stove top, bbq or camp fire.

Very poor quality
So disappointed with this product. I bought this as I have the cast iron skillet and that works fine. Firstly this arrived damaged per photo. Secondly, as soon as I heated up the pan to medium heat only it completely warped. It was never completely level with the cooking surface (slight wobble). When it cools down the warping reduces. All in… for a £50 pan this is unacceptably poor quality

Arrived warped; heavier than expected; cleaned up easier than expected.
Doesn't sit flat by at least 2mm, which is annoying. Now I'm going to have to find someone to hammer it flat. Hard to test the cooking capability when over half the pan isn't in contact with the induction cooktop. However I did find that eggs which seemed to be sticking actually allowed themselves to be scraped under and flipped without breaking the yolks, which I can *never* get to happen in my eco-nonstick pan. Did a potato veg hash once and fried eggs twice. All three times got the pan hot first, then added the fat, allowed the fat to get hot, then added the food. All three times food stuck. After the pan cooled a bit I added hot water and I'll be danged if the food didn't release with a one easy pass of the spatula. Literally amazed. (I have previously cooked quite a bit in cast iron and won't let eggs near that pan.) I will also add that it is quite a bit heavier than expected (and I had read and watched a lot of reviews). I find it really difficult to one-hand it when pouring out the contents, which is of course necessary because I need the other hand for helping with the spatula. Amz says Lodge skillet weight is 3.41lbs. Amz says the Matfer Bourgeat is 4lbs11oz AND ALSO SAYS 1.9lbs someplace else. Will have to research further.

An amazing pan!
I bought this as a gift for my son and he absolutely loves it! It gets used everyday for a variety of dishes. I would recommend this product.

Great Product
These pans are brilliant. So long as you look after them, follow the washing instructions and season them they will perform superbly. Much much better than any non stick pan.

Having only had non-stick and stainless steel pots and pans it took some time to learn the best way to cook with carbon steel and cast iron pans but I love them now. I got rid of all our non-stick cookware even though they were expensive top brands and non-PFOA. Some were scratched and I read scratched non-stick pans are unhealthy to use. It seems like the non-stick pans keep evolving to some other chemically made coating because the previous one turned out to be toxic. Now I cook only with carbon steel, cast iron and high quality stainless steel. I use stainless steel for boiling soups, pasta and acidic food like marinara sauce but carbon steel and cast iron for pretty much everything else. Using the care and cooking information from Lodge on their site has helped immensely and we keep noticing that what I cook just tastes better! I love that you can heat the carbon steel pan and seer the outsides of foods without drying out the interiors. You can scrape whatever sticks and use stainless steel utensils without worrying about damaging the pan. It took a while to develop a non-stick quality that is possible in carbon steel cooking with oil seasoning. We have a whole food plant based diet (except for the occasional eggs our pet hen gifts us) and the vegetables taste amazing! The WFPBD gurus often recommend don’t cook with oil but I personally would rather take my chances with oil than non-PFOA coatings. Also, carbon steel and cast iron is better for the environment. I don’t know how to keep my discarded non-PFOA pans that are damaged out of a land fill! I also got a cast iron cleaning kit on Amazon that has a mesh metal tool that helps scrape off anything that sticks. I had given up on a small cast iron pan I bought years ago when it rusted after I washed it and it sat in my cabinet unused. I read the directions again on how to care for it and now it is one of my favorite pans. The rust cleans up and you just season it again. I wanted to try carbon steel after reading it was lighter weight than cast iron and French chefs prefer it. The care is pretty much the same for both carbon steel and cast iron but carbon steel is lighter weight. One benefit of cast iron that carbon steel doesn’t have is that I can build up muscles just lifting it. LOL. This pan is a good size for many recipes and has become one of my go to favorites.

This pan fits our 6-top gas range perfectly and is much easier to work with than the heavier cast iron griddles I've owned in the past. The pan holds heat well enough to make proper smash burgers and it's non-stick enough that cooking eggs or fish works without issue, with a bit of care. The handles are a great addition for moving the pan out of the way for washing or cooling off. The pan cleans up easily given the tall lip and handles. I generally add water and bring it to a boil to lightly scrape off the stuck bits. With a light wipe in the sink when it cools down to remove any extra bits, I let it dry off and give it a light coating of oil with a clean cloth. If you find it loses its coating, you can add it back with the same basic process as a cast iron pan, though I haven't had to do that yet (I avoid acidic foods, and clean it carefully). This pan would also be great for camping (though this one is not leaving my kitchen any time soon).
