Sweet Alchemy: Dessert Magic

The cookie recipe pictured on the bottom-right corner of the cover is nice, but not my favorite
There is a HUGE error in the citrus-scented panna cotta recipe. The amount of gelatin specified in the recipe made the custard almost indedibly firm. Cut it down to one package of powdered gelatin for a luscious panna cotta. The cookie recipe pictured on the bottom-right corner of the cover is nice, but not my favorite. Lots of beautiful desserts I'm excited to try! More advanced than most home bakers, however. Not for everyone.

When you get to try making them you'll be like..
At first I thought the recipes were complicated. When you get to try making them you'll be like..."wow! That wasn't that hard to make!". And the recipes taste great!

What I love about this book.
One of the hallmarks of Yigit Pura's work as a pastry chef is the incredible range of flavors, textures, colors and shapes he is able to marshall, to marry in an almost Wonka-esque fantasy. Fruits and liquor and herbs and spices, chocolate and creams and flowers and nuts - his desserts, of which I have probably eaten dozens, are a mix of perfectly conceived classics and tastes that are true one of a kind creations, in both appearance and flavor profile. What I love about this book is the way it takes nearly the full range of Pura's work and makes it approachable and accessible to a novice to pastry by breaking down pastry cheffing into a series of very doable techniques to be carried out by a clearly defined series of tools. At the same time, there are recipes in here that have proven in my own household to be quite challenging to very adept and advanced home chefs with a lot of experience creating desserts. Additionally, the clear straight-forward writing style and the colorful presentation and photographs make the book itself a real pleasure to read and work with.

Useful tips, clear direction and a bit of humor!
I couldn't wait for this book to be out and had it in my hands the first day, went right to a coffee shop and started reading. It's not only an amazing cookbook, but it tells a story and just love how it is written with useful tips, clear direction (complex flavors, but written in a way that a home baker can feel comfortable with) and a bit of humor - almost as if he is in the kitchen with you. As I am lucky enough to live in San Francisco, I am able to visit his shop in Union Square as often as I am downtown. I was excited to see many of my favorite things from the shop are in the book as well as many other amazing recipes to get me inspired. I have also had the pleasure of meeting Yigit and he is such a warm, kind soul and is someone who will make you feel inspired to start baking from front to back in this beautiful book. I can already tell it will be one of my favorites to bake from when I have friends over for dinner parties!
