After opening, I store the garlic in a large kilner jar in a simple brine solution which as you know preserves and lengthens the shelf life. I do, however, always store in the fridge anyway but not sure it is absolutely necessary. I have done this with several of these packets and they are still fine after some weeks (although they don't last long in our house) ! Hope this helps.

Do garlic in brine have as much nutritional value as raw garlic

I don't see why there would be any reduction as the brine is just a presevative and they have the same texture as fresh garlic

Are these suitable for home freezing?

I have. They lose a little crunch. I now store them in a Kilner Jar pickled in sweet vinegar.. am due to order another pack. I eat them like chocolates !

Does anyone know if the cloves in this form keep their medicinal benefits?

Yes ....I have had a hard life.. The health bonus of garlic is what I am presuming on .. They are a treat for me you do get a taste for them just like eating olives does the same.... Nowadays I try to eat less and to eat healthy as a matter of course. Since I started eating cloves of garlic on a regular basis I know I do not have as many problems with catching colds or contracting bronchitis in the wintertime as I once did...
