Why are the darker colors like deep blue, evergreen and others less soft and buttery? When using they don't lay down smooth, scratch even??

Some pigments are softer (finer particle size) than others. Sennelier does not add talc to equalize the textures, because that would dull the colors.

What’s the size of this half stick? Thanks

1 1/4" long. Easy size to work with. I love these.

What are the specific colors to the 80 piece set?

If you look at the box, it looks like all the colors are there.

Are these oil pastels or soft pastels?

These are soft pastels. But they also have oil ones
