What value do these offer over a double-sided gooseneck with alligator clamps on either end?

The double sided goosenecks are my preferred option if working in a controlled environment like a tool bench. You can put the gooseneck in a vice and off you go. This tool does the same thing but gives you capability if you have to solder in a tight space like an engine bay where there is no vice. It’s whatever your preference is. More tools in the toolbox provides you additional options

Why does one of the pictures show it holding wires that are frayed and dirty, thus virtually impossible to solder?

That’s not because of the tool, right? Don’t worry about the picture, the tool is not responsible for dirty wires. What the tool does though, is provide a third hand so that your two hands are free to solder. Works great. It’s up to you to have clean wires to solder. The tool doesn’t magically do that for you. Kind of a silly question

What is the measurement tip to tip with the jaws wide open?

I believe it’s like an inch and a half

How do these function? don't tell me they "hold the wires"; how do they? the video & pictures are suspiciously vague.

Dear, it is designed for holding two wires while they are soldered together, the lower jaw opens up on both sides to facilitate cable positioning.
