Can i use it to cut block cheese ?

If the cheese is a hard cheese...parmesan, hard cheddar, yes, it will cut it. If it gets warm though it tends to gum up the blades.

could you use this frequently like in a busy kitchen restaurant?

I would say yes but plan on replacing it every 6 months. Just knowing how people are going to harder than normal. Just like knives and tongs that people are harder on.
