Q: Can I stack the 2 beds together to make one tall bed ?

Actually you can, with difficulty, but I wouldn't recommend it. After I realized that the height of one wouldn't be enough to keep out rabbits (and probably the dog), I undid the top screws and overlapped the second set of panels on top of the first. It wasn't easy, and it didn't double the height, but it did increase it by about 9". I would recommend buying a planter designed to be taller (there are many), rather than stacking them.

Q: Does this actually come with 2 separate 8'x3'x1' beds? Or is it 2 4ft beds put together?

It comes with 8 arched sections and 8 straight sections. You can assemble them however you wish. I chose to make two separate 8-ft beds.
