Carbon steel paella pans or Paelleras conduct heat quickly and evenly. The steel is quite rigid and durable. Made in Valencia, Spain, a true authentic product. These lovely Carbon or Polished steel paella pans have a signature slightly convex base that allows the oil to collect in the centre to assist in the first stages of preparing and cooking the Paella dish. They are shallow and have sloping sides, which helps the rice cook evenly and develops more intense flavor. Carbon Steel requires a bit of care after each use to prevent rusting - please ensure that you wash and fully dry them after use - and store with a thin coating of olive oil. Before the first use, you'll need to wash it well to remove the manufacturer's special anti-rust coating. You can do this with hot soapy water. Even better, heat some water in the pan with a dash of cider vinegar. Simmer for 10 minutes or so, and then rinse. Be sure to dry the pan thoroughly, and then lightly coat the inside with a bit of vegetable oil. This seals the surface to prevent rusting.
