How's this cassava flour in texture compared to Otto's for making tortillas and pizza dough? Thanks!

This flour is a million times better than Otto’s. Ottos always has little fibrous hairs in it that I have to sift out. This has no such fibers and the flavor is very good - almost buttery.

Can this product be used to make bread in a bread machine ?

I do not know; I don't have a bread machine, nor am familiar with their character.   This particular Cassava does tend to get soft and dough-like.  There are different type of cassava:  the one we get from Azure is more rubbery.  The Terrasoul is doughier.  If making tortillas the rubbier consistency helps.  The doughier kind works better for crackers.  So, it just may work okay for bread.  Try it; then you'll know.  Not sure if it would make it too firm, but guess you could just add a bit more water.  I wouldn't do all Cassava flour, but would rather mix with other flours.

Is this made from the whole root or is it just the starch?

It says on the package that it is made from 100 percent certified organic yuca roots.

Anyone  want to share their tortilla recipe?

The TerraSoul cassava flour makes excellent tortillas with this simple recipe. Add together 3/4 cup cassava flour & 1/4 tsp salt. Add 2 Tbs olive oil & 1/3 cup water. Add more water if needed.  Roll out between 2 sheets of parchment paper and cook on medium hot pan or griddle (do not grease). Flip to other side when bubbles start to form. Keep covered to stay soft and warm. Best Cassava flour I've used for tortillas!
