Please see the package.  1/4 cup + 1/2 TBSP  or 65 grams.  Best use a digital kitchen scale.

to whip up the mix, is it okay to do with a hand mixer? I dont have a stand.

Accepted Answer

YES!  As of this writing, with the single step mix, you can indeed use a hand mixer.  Use a deep dish similar to a stand mixer bowl.  Add 1/4 cup 122'f water to the "Macaron" mix.  Run hand mixer at lowest speed.  Whip for 3.5 minutes.  Use a spatula to collect and incorporate any batter stuck to the sides (fold batter with an over under motion 2-3 times).   Pipe and bake.   Note the difference between bake settings using conventional setting and convection.  In general, with convection settings you can bake immediately while in the traditional bake settings you need to wait 15 minutes for the batter surface to dry.

The new packaging says 24 cookies (or 48 shells).   It also contains buttercream mix.

What about high altitude baking instructions?

Directions are for typical environmental conditions.  It is impossible to develop an exacting set of instructions for different environmental conditions.  You could be in a high altitude dry, humid, hot, cold, cloudy...  We've been using this mix almost on daily basis during summer, hot, cold, cloudy, and dry days and we haven't had to alter our approach.   Just make sure cookie surface is dry to touch before baking.  Please note that we have yet to see any cookie/cake mix that has clear instructions for various environmental conditions.  As for your refund, if you purchased via Amazon prime/delivery then Amazon will address your request.  Otherwise, you request refund from the seller like any other Amazon purchase.
