If i buy probe 2 and probe 3, where are they meant to be stored since the hub looks like it only holds one probe?

There are cut outs in the inside of the lid to store 2 additional probes. But only the cradle charges the probe. You have to use the app to see if probes can be detected and charge them if they aren’t.

How far does this reach using wifi? Will I be able to use the app to see the temperature of my meat if I am 10 miles away?

You need to keep the hub pretty close to the smoker, or the thermometer. I have to set mine in a window about 10 feet away from my cook station.

Can the probe be sealed inside a plastic bag and submerged underwater for cooking sous vide?

Antoin, I would seal it inside the vaccuum bag with the meat. But really I wouldn't bother with it for sous vide since the whole thing about sous vide (for me any way) is cooking/holding something a loooooonnnngggg time at a set temp. I don't really need to know when it got there, it's not precision cooktimes for me. if it took 2 hours vs 1 hour to get to temp, and then sat for 22 vs 23 hrs... I just don't care about that.

Can this be used in an instant pot or ninja foodi pressure cooker?

Although I’ve never tried it, it is a sealed unit and since it is inside of a vessel cooking at over 500° I don’t see the reason that you shouldn’t be able to use it that way I doubt that I would try it in a pressure cooker but I don’t see any reason that you can’t use it in a ninja foodie or Insta pot
