My Nakiri VEGGIE Knife
Iโm very pleased with my Syosaku nakiri knife. Its blade is so sharp and its mahogany haft is comfortable to hold and beautiful. I also bought the optional โSayaโ (wood sheath).โNakiriโ is Japanese for "vegetable cutter." So itโs a specialised knife, but thatโs no problem for me โ I canโt remember the last time that I used my chefโs knife for any purpose other than cutting veggies. Now I have a knife made just for that purpose. My 8-inch chefโs knife is likely destined for Goodwill.The Syosakuโs blade is delightfully thin despite having three distinct layers. The middle layer is high carbon stainless steel (HRC 60-62). The two outer layers arenโt as hard, but may have better toughness and/or corrosion resistance.The Nakiri is much handier in use than my chefโs knife, thanks to its light weight, sharpness, and compact blade. I have no use for the sharp point of a chefโs knife.I have only one minor complaint. The sheath is secured onto the blade by a little plastic pin. That little pin is VERY easy to lose. I nearly lost it down the drain of my kitchen sink. It canโt cost more than a penny, so Syosaku shouldโve included several spare pins.

Beautiful and Razor Sharp
As sharp a knife as I have ever owned. Beautifully crafted. Worth every penny. I am so often disappointed with online purchased knives-not this one. Itโs a keeper.

Box already open
The knife is fine. Seems a little cheap for the price, and the box arrived already opened, without mention of being used. However, itโs still a quality product.

Good Knife, Bad Feel
I wanted to love this knife so, so, bad, but our marriage was doomed from beginning. Hell, I didn't even take it to work as I had it wrapped back up and ready to send on its way mere hours after receiving it. This knife just didn't work for me because my hand rejected it like a Blue Light Special pack of used underwear; I think I almost dropped it I hated the feel so much. Rough, unbalanced and light as a quarter of a feather with a keen blade and unforgiving temperament. Maybe it's for you.

Not crazy about the single side sharpening, but only because I am left handed. Beautiful piece of work and craft.

Amazing product that was sharp right out of the box. perfect length for all petty knife jobs, yet can still handle more heavy duty work like large prepping jobs you'd do in a work kitchen. Only thing to point out is you should wipe it off every 7-10 cuts since edging design gets sticky with moisture.Otherwise I 100% reccommend to both home and professional cooks.
