Not what I expected
This book was kind of a deception... just a few reflections through a combination of high quality photographs (more directed towards artistry rather than to show a particular dish) and product combination, oftenly raw, that tend to show the "inmediate cuisine" he has for long proclaimed.I would rather go for the exceptional "La Cuisine Inmediate", if you can find it, or the spectacular "L'Invention de la Cuisine", a DVD in which Michel Bras, Olivier Roellinger and Gagnaire show how they create dishes.

This is Art, not a cooking manual/recipe collection!
This is not a cookbook. This is more of a collection of thoughts from the mind of one of the most poetic chefs. Extremely thoughtful and would be appreciated by most high level fine dining chef who want a glimpse into Pierre Gagnaire's mind accompanied by great photography without recipes

Nice for a artist not a chef
The pictures are beautiful, extraordinary, yet I Whish I was able to see the whole plate and see the dish in the visual.
