Q: What is the height distance between shelves

The height of the first shelf is 6.8'' and the height of the second shelf is 7.5''.

Q: Is it optional what shelf you use for the power strip ie: the top or middle shelf?

mine didnt have a power supply but if it similar in design mine has 4 solid shelves ( two long shelves) and 2 metal shelves that go on the bottom.. I would think you could put the power supply on any one of those 4 positioss.

Q: Can I set this unit up without the middle shelf and install the wooden shelf on the bottom with only 2 shelves total so I can install a printer?

You probably could as long as you leave the back 2 middle shelf bar on it, if you don't I wouldn't put a big tv on it,I don't think it would be stable enough.
