My new favorite!
I love Job's tears for casseroles, soups, and as a pasta substitute for pesto. It has a great chewiness but remains tender. I vastly prefer it to wheat products like farro. It is also a great ingredient to use in salads rather than couscous or orzo. It also has great nutritional value. I'm definitely a concert!
